We’ve been LOVING strawberry season around here! The weather has made it a little longer than usual, so we’ve been making almost weekly trips to the strawberry patch. Aside from cereal and snacks, we haven’t been able to keep up with all the berries! So rather than risk them going bad, I found a great recipe {which may or may not have come from the back of the pectin box!}, which I tweaked until I found the perfect sweet strawberry combination! And seriously, the BEST EVER strawberry jam!
You’ll need:
Mash up the strawberries, a few at a time. I’ll be honest, I started with a hand masher….and ended with 3 pulses on my Magic Bullet!
When you are done mixing, it should look pretty smooth, but with some texture. Slowly pour the sugar into the strawberries, and let it sit for about 10 minutes.
Combine the pectin and water in a small saucepan, and boil for 1 minute, stirring constantly.
Pour the pectin and water mixture into the strawberry mixture and stir for about 3 minutes, it’s not grainy anymore.
Fill up your containers quickly, wiping the rims and leaving about 1/2 inch at the top. Make sure you screw your lids on tightly.
I was able to fill these five jars {three little ones to share…and two to devour!}
